- 350g extra firm tofu, pressed and cut into 1.5-inch strips
- 1 tsp grated fresh ginger
- 1 tbsp sesame oil
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 clove garlic, minced
- ¼ head of purple cabbage (approx. 2 cups), thinly sliced
- 1 large carrot, shredded or thinly sliced into matchsticks
- 1 red bell pepper, thinly sliced
- 1 ripe mango, thinly sliced
- 1 ripe avocado, sliced
- ¼ cup fresh mint leaves, chopped (optional, but highly recommended for freshness)
For the Spicy Peanut Dipping Sauce:
- ¼ cup warm water
- 2 tbsp creamy peanut butter (all-natural preferred)
- 1 tbsp fresh lime juice (from about ½ a lime)
- 1 clove of garlic, minced
- Pinch of chili flakes (¼ – ½ tsp, adjust to your spice preference)
- 1 tbsp soy sauce (or tamari for gluten-free)
Instructions

- Arrange the marinated tofu in a single layer on the prepared baking sheet. Bake for 30-40 minutes, flipping the tofu halfway through the cooking time to ensure even browning and crispness. The goal is golden-brown, firm tofu.
- While the tofu is baking, prepare the irresistible peanut dipping sauce. In a small bowl, whisk together the warm water, creamy peanut butter, fresh lime juice, minced garlic, chili flakes, and soy sauce until completely smooth and well combined.
