My husband-to-be, Meik, has relatives traveling from Poland, and my sister, her husband, and my adorable niece, Mila (with whom I’m utterly obsessed!), will be staying with us for three wonderful weeks! Post-wedding, we’re planning a blissful week at the lake with them, unwinding under the sun and soaking up precious family time.

  • 4-8 rice paper wrappers (adjust based on desired serving size)
  • 2 oz (~100g) rice noodles (vermicelli), cooked according to package directions
  • 1.5 cups of any leftover protein, thinly sliced or shredded (e.g., shrimp, chicken, beef, tofu, tempeh, eggs)
  • 2-3 cups of colorful fruits or vegetables of choice, thinly sliced or shredded:
    • Purple cabbage, thinly shredded
    • Shredded beets or carrots for a pop of color and crunch
    • Bell peppers (red, yellow, orange), thinly sliced
    • Radishes, finely sliced
    • Cucumber sticks
    • Fresh herbs like mint, cilantro, or basil
    • Optional fruits for a sweet twist: kiwi, strawberries, or mango slices
  • 1/2 of an avocado, thinly sliced
  • 1/4 cup of fresh mint and/or basil leaves, chopped (adds a burst of freshness)
  • Optional: Lettuce leaves for extra crunch

For the Easy Peanut Dipping Sauce:

  • 1/4 cup warm water
  • 2 tbsp creamy peanut butter (all-natural preferred)
  • 1 tbsp fresh lime juice (approx 1/2 lime)
  • 1 clove of garlic, minced
  • Pinch to 1/2 tsp chili flakes (adjust to your preferred spice level)
  • 1 tbsp Soy sauce (use tamari or coconut aminos for a gluten-free alternative)
  • Optional: 1 tsp maple syrup or honey for a touch of sweetness

Instructions

  1. Prepare the Noodles: Cook the rice noodles according to their package directions. Once tender, drain them thoroughly through a strainer and set aside. If they start to clump, a quick rinse under warm water will loosen them up.
  2. Make the Peanut Dipping Sauce: In a small bowl, combine all ingredients for the peanut dipping sauce: warm water, creamy peanut butter, lime juice, minced garlic, chili flakes, and soy sauce. Whisk vigorously with a fork until the sauce is completely smooth and creamy. Adjust sweetness or spice to taste. Set aside to allow flavors to meld.
  3. Prepare Your Fillings: While the noodles cook, neatly prep all your chosen fruits, vegetables, and protein. Ensure everything is thinly sliced, julienned, or shredded to facilitate easy rolling. Arrange them attractively on a large platter or cutting board, creating your “assembly line.”
  4. Softening Rice Paper Wrappers: Fill a large, shallow pan or a wide baking dish with about 1-2 inches of warm water. Take one rice paper wrapper at a time and dip it into the warm water for 15-20 seconds. The wrapper should become soft and pliable, but not overly flimsy or tearing. Remove the paper from the water and carefully lay it flat on a clean, damp working surface (a large cutting board or a clean, wet kitchen towel works well). Pat it gently with a paper towel if it feels too wet.
  5. Assemble the Rolls: Immediately begin assembling your wrap. Place a small amount of each desired ingredient (noodles, protein, various vegetables, avocado, herbs) across the center of the wrapper, leaving ample space at the top and bottom edges for folding. Be mindful not to overfill, as this will make rolling difficult.
  6. Roll the Summer Rolls: To roll, first fold the bottom edge of the wrapper up and over the fillings, tucking it in snugly. Next, fold in both the left and right sides of the wrapper towards the center. Finally, starting from the bottom, roll the entire assembly tightly upwards, like a burrito, until you have a firm, enclosed roll. Repeat the process for the remaining wrappers and fillings.
  7. Serve and Enjoy: Arrange your beautifully rolled summer rolls on a serving platter. Serve immediately with the homemade spicy peanut dipping sauce. Enjoy these fresh, vibrant, and nutrient-packed treats!
