  • 1 large egg, whisked (for binding the coating; for a vegan option, use a flax egg or a plant-based egg substitute)
  • ¼ cup unsweetened shredded coconut (for a balanced coconut flavor)
  • ¼ cup sweetened shredded coconut (adds a touch of sweetness and extra crispiness)
  • ¼ cup panko bread crumbs (for superior crunch)
  • ½ tsp fine sea salt (enhances all flavors)
  • 1 tbsp Naked Coconuts Coco Ghee (for frying, provides rich flavor and high smoke point)

  1. Prepare the Cashews: Begin by soaking your raw cashews. Place them in a bowl and cover completely with boiling water. Let them soak for at least 30 minutes. While overnight soaking yields an even creamier texture, a quick hot water soak works wonderfully when you’re short on time.
  2. Marinate the Tofu: While cashews soak, prepare the tofu marinade. In a shallow dish, whisk together the Naked Coconuts Soy Free Seasoning Sauce, fresh lime juice, and a generous crack of black pepper. Press your firm tofu block thoroughly to remove excess water (this is crucial for crispiness!), then cut it into ½-inch cubes or your desired bite-sized pieces. Add the tofu cubes to the marinade, ensuring they are well coated. Let them marinate for a minimum of 30-45 minutes to absorb all the delicious flavors.
  3. Make the Creamy Sriracha Cashew Sauce: Once the cashews have softened (after soaking), drain them thoroughly. Transfer the drained cashews to a high-speed blender. Add the 1 Tbsp Naked Coconuts Coco Ghee, Sriracha (start with ½ tsp and add more to your spice preference), fresh lime juice, 2 Tbsp warm water, and coarse salt.
