Description

Elevate your avocado experience with these quick and easy avocado pickles! In just 15 minutes, you can create a batch of tangy, flavorful avocado slices packed with healthy fats and fiber. Perfect for meal prep, these pickles add a unique zest to any dish and are a delicious alternative to fresh avocado.


Ingredients

1 cup of sliced avocado (from 1-2 firm, unripe avocados)

¾ cup (175 ml) hot or boiling water

¾ cup (175 ml) white vinegar

2 tsp salt (kosher or canning salt recommended)

2 tsp sugar (granulated)


Instructions

  1. Carefully place the uniformly sliced firm avocado into a clean mason jar with a minimum volume of 2 cups (500ml). Add the hot water, white vinegar, salt, and sugar to the jar.

  2. Securely screw on the lid and gently shake the jar to thoroughly combine the ingredients and ensure the salt and sugar are completely dissolved into the pickling liquid.

  3. Allow the jar to cool to room temperature. Once cooled, store the pickled avocados in the refrigerator. They are best enjoyed after a few hours or overnight, and will keep fresh for up to 2 weeks.
