Description

Discovering quick pickling has completely transformed my cooking! These easy homemade pickles infuse your dishes with beautiful color and the perfect tangy kick, ideal for bowls, salads, tacos, or enjoyed on their own as a healthy snack. This recipe features vibrant red onion, crisp purple cabbage, zesty radishes, and a unique twist with creamy avocado. It’s a vegan-friendly way to add incredible flavor to any meal!

For each jar of pickled vegetables:

  • Approx. ½ cup of your favorite fresh vegetables to pickle (e.g., thinly sliced purple cabbage, red onion, radishes, or firm avocado)
  • ¾ cup (175 ml) boiling water
  • ¾ cup (175 ml) white vinegar
  • 2 tsp salt
  • 2 tsp sugar
  • Optional additional spices (I didn’t use any for these specific recipes, but feel free to add whole dill seeds, garlic cloves, coriander seeds, or chili flakes – customize to your taste preferences or simply leave plain for a pure tangy flavor).


Instructions

  1. For pickling avocado, I highly recommend using less ripe (almost unripe) avocados. Ripe avocados tend to become too mushy in the brine and can be difficult to remove from the jar without losing their shape. Opt for firm avocados to ensure a pleasant texture.
  2. You have the flexibility to swap the white vinegar for other types such as apple cider vinegar, white wine vinegar, or rice wine vinegar if you prefer. Just keep in mind that the vegetables will absorb the distinct flavor profile of whichever vinegar you choose, adding another layer of customization to your pickles.
  3. Similarly for sugar, you can substitute with different types like honey, maple syrup, or a sugar substitute. As with the vinegar, this will subtly modify the overall flavor of your pickled vegetables, so choose according to your desired sweetness and taste.
  4. Begin by preparing your vegetables: slice them thinly, ideally in lengthwise cuts for a more elegant presentation and consistent pickling. Ensure the slices are small enough to fit comfortably into your chosen jar(s) and allow the lid to close securely. Pack them snugly into the clean jars.
  5. In a large pitcher (if preparing multiple jars) or a large drinking glass (for a single jar), combine the boiling water, your chosen vinegar, salt, and sugar. Stir the mixture vigorously until both the salt and sugar are completely dissolved. I highly recommend making multiple jars – you’ll definitely be glad you did!
  6. Carefully pour this hot pickling mixture over the sliced vegetables in your jars, making sure they are entirely submerged in the liquid. This complete coverage is vital for proper pickling and food safety. Screw the lids on tightly and allow the jars to cool down to room temperature on your counter before transferring them to the refrigerator. They’re typically ready to enjoy in just a few hours, but their flavor deepens over time!

Notes
