Who doesn’t adore the classic Peanut Butter & Jelly combo? These delightful sweet treats are a fantastic idea for a thoughtful homemade gift, a quick energy boost in the afternoon, or a lovely dessert. They are incredibly easy to make and offer a satisfying blend of nutty, fruity, and chocolatey flavors. For a delicious vegan option, simply use your favorite vegan chocolate chips!

- 1 ½ cups high-quality dark or semi-sweet chocolate chips (choose vegan chips for a fully plant-based option)
- 1 tbsp Coconut Oil (helps achieve a smooth, glossy finish)
- 1 batch of freshly preparedRaspberry Chia Seed Jam (or approximately ½ cup of your preferred, good quality jam)
- ¼ –⅓ cup of your favorite creamy peanut butter (I achieved a fantastic flavor with this coconut peanut butter spread from Whole Foods, but any natural, creamy variety will work beautifully)
Instructions
- Combine the chocolate chips and coconut oil in a medium-sized, microwave-safe bowl. Heat on high for 1 minute, then carefully remove from the microwave and stir thoroughly until smooth. If there are still lumps, continue to melt in short 30-60 second intervals, stirring well after each interval to prevent burning and ensure a perfectly smooth, velvety chocolate.
- Arrange mini cupcake liners in a mini muffin tin. Pour approximately 1 teaspoon of the melted chocolate into the bottom of each liner, ensuring an even coating. Place the muffin tin into the freezer to allow the chocolate to harden, which usually takes about 5-10 minutes.
- While the chocolate bases are chilling, prepare your Raspberry Chia Seed Jam according to its recipe, or simply get your chosen store-bought jam ready. Set it aside for easy layering.
- After about 10-15 minutes, the chocolate bases should be firm enough to handle. Take the muffin tin out of the freezer. Top each hardened chocolate base with approximately ½ teaspoon of your favorite peanut butter, spreading it gently. Follow this with ½-1 teaspoon of your delicious jam mixture.
- Carefully spoon the remaining melted chocolate over the peanut butter and jam layers, ensuring each cup is fully covered to create a smooth top. Return the muffin tin to the freezer for a minimum of 1 hour, or preferably overnight, to allow the cups to fully set and firm up. Once solid, they are ready to be enjoyed!
