Description

Ready in just about 30 minutes, it’s a perfect weeknight meal that’s both satisfying and wholesome.

- 160g Fettuccini noodles of choice (half of a 375g box)
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 medium head of cauliflower (approx. 4 cups, chopped)
- ½ cup milk of choice (dairy or non-dairy)
- ½ cup of reserved pasta cooking liquid, ideally made into a strong vegetable or chicken stock (double the amount of stock mixture to water ratio)
- ⅓ – ½ cup freshly grated parmesan cheese
- Lots of freshly-cracked black pepper
- Coarse salt (approx ¼ tsp, adjust to taste)
- Fresh parsley to garnish
Instructions
- Add about an inch of water and your chopped cauliflower florets to a large frying pan. Cover with a lid and steam until the cauliflower is fork-tender, approximately 15-20 minutes. Ensure it’s very soft for a smooth sauce.
- Meanwhile, bring a large pot of salted water to a rolling boil. Add your fettuccini noodles and cook according to package directions until al dente. Once cooked, drain the pasta, making sure to reserve ½ cup of the starchy cooking water.
- When the cauliflower is about 5 minutes away from being done, heat the extra virgin olive oil in a small saucepan over medium heat. Let the oil warm up for about 1-2 minutes, then add your minced garlic. Sauté until fragrant and lightly golden, being careful not to brown it (approx. 2-3 minutes).
- Once the cauliflower is perfectly tender, drain any remaining water and transfer it to your Vitamix or a high-powered blender. Add the sautéed garlic oil, your chosen milk, the stock made from the reserved pasta cooking water, parmesan cheese, and season generously with salt and pepper.
- Blend on high until a completely smooth, thick, and creamy sauce forms. Scrape down the sides of the blender as needed to ensure everything is incorporated.
- Return your cooked pasta noodles to the large pot. Pour the cauliflower Alfredo sauce over the noodles, using a spatula to get every last bit out of the blender. (You might not need all the sauce; if so, reserve any extra in an airtight container for later use). Mix gently until the noodles are thoroughly and evenly coated with the rich, creamy sauce.
- When ready to serve, transfer the fettuccini Alfredo to individual plates. Garnish with a sprinkle of fresh chopped parsley and, if desired, a little extra freshly-cracked black pepper and a pinch of salt to taste.
