Instructions
- To a large bowl, add soy sauce, maple syrup, oil, garlic, salt and pepper. Whisk to combine. Add chicken and marinate for a minimum of 30 minutes or overnight.
- Heat barbecue on high, then turn down to medium-high heat (about 400F / 200°C).
- Place chicken on the grill, thick side down and cook 6-8 minutes. Flip and cook another 6-8 minutes on the other side until juices run clear when pierced with a fork or knife, or internal temperature reaches 165°F (74°C). Remove chicken from the grill and let it rest for about 5 minutes.
- While the chicken cooks, add the slaw mix, lime juice, olive oil and salt to a medium bowl. Mix to combine and set aside.
