Made in France by Mauviel, a well-known manufacturer of professional cookware, this paella pan is built from extra-thick black carbon steel designed for rapid, even heat-up and excellent conduction.
Construction: the body is heavy-gauge black carbon steel; the handles are iron and secured with 18/10 stainless-steel rivets for long-term durability. The pan's diameter is approximately 15.7 inches, offering ample surface area for paella, searing, and large-batch cooking.
Performance: black carbon steel warms quickly and reaches searing temperatures faster than many alternatives, making it ideal for browning, searing, grilling and high-heat stovetop work. It is compatible with all cooking surfaces, including gas, electric, oven and most grills.
Finish & seasoning: the pan ships untreated for a natural finish that must be seasoned before first use. When properly seasoned, the surface darkens and forms a protective, naturally nonstick layer that improves with repeated use.
Care instructions: hand wash only. Avoid dishwashers, metal utensils on the cooking surface, scouring pads, steel wool, abrasive cleansers, bleach or oven cleaner. After washing, dry immediately and lightly oil the interior to prevent rust; store in a dry location. Do not remove the patina that forms on the base — it is not dirt but the developing nonstick film. Misuse or abrasive cleaning can damage the surface and may void the warranty.

Arrived with wax residue on handles
I sent this back. It was covered in a yellow waxy substance that was uneven and tough to remove. If the wax is applied evenly it’s manageable, but this came thickly globbed on the handles and wouldn’t clean off properly.

Warped on induction
It warped after the first or second use and is now unusable on my induction stovetop.

Worked well on the grill after removing wax
Nice pan. The beeswax coating made initial cleanup a challenge — we baked and boiled it to strip the wax, which was messy, but once removed it seasoned up nicely. Used it for paella on a Weber grill and it performed great.

Great lighter-weight alternative to cast iron
I bought this to use as a large skillet rather than for paella. The flat bottom and tall sides make it perfect for big batches, and it fits in the oven. Handles run hot but that’s expected. I removed the wax by placing it upside down in a 300°F oven for an hour and wiped it as it cooled, then seasoned inside and out. Measured about 15 15/16" wide by 2 3/8" deep (excluding handles). It cooks like cast iron but is noticeably lighter—highly recommended.

Thoughtful gift for a home cook
Gave this to my mom who cooks often. With care it developed a deep seasoning that’s nearly nonstick. She appreciates the two handles for easy lifting. Pros: good value, easy to maneuver, seasons well. Cons: harder to maintain than stainless steel, and acidic foods can strip the oil layer and promote rust if not managed.

Packaging and seasoning instructions could be better
Box showed damage and the plastic bag was torn, so I think it was returned once. The pan itself is fine. The included seasoning instructions left a sticky black layer; follow YouTube guides for thin, repeated oil layers to get a better finish.

Really like this pan
I enjoy using this. You must season it and be patient while it becomes nonstick, but the result is worth it. It’s not heavy and feels well made.

Excellent quality once you learn carbon-steel technique
Very solid pan. Comparable to other Mauviel steel pieces. If you're used to cast iron, adapting to carbon steel is straightforward — it heats faster and is lighter. It needs seasoning and that coating isn't as permanent as cast-iron's, probably because the steel is denser. I haven’t tested eggs on it yet, but everything else cooks beautifully. Wish I’d started using these sooner.
