I can’t stop thinking about these rich, fudgy no-bake chocolate crunch protein balls. Made in one bowl with no food processor, they take just 15 minutes to prepare using simple pantry ingredients like almond butter, almond flour, and hemp hearts. Each ball contains over 5 grams of protein and about 3 grams of fiber (no protein powder needed). Keep a batch on hand for a nourishing, chocolatey treat whenever a craving hits.

If you’ve tried my chocolate chip oatmeal protein balls, you know I love easy, no-bake snacks that actually satisfy. This chocolate crunch version doubles down on chocolate and adds a crispy coating that elevates the texture—soft, fudgy centers with a crunchy shell in every bite.
When I set out to make these energy balls I had two priorities:
- They had to taste like a treat.
- They needed to be filling, satisfying and energizing—not draining.
These hit both goals. Energy balls often have healthy fats and fiber, but can be low in protein. Adding protein helps keep you full longer and steadies energy. Instead of relying on protein powder, I used a natural combination that keeps the flavor balanced while reaching the protein target.
Test Kitchen Tips to Make the Best No-Protein-Powder Protein Balls

Although this recipe is simple, I tested several variations to perfect flavor and texture. Key notes:
Maple syrup beats dates for ease
I originally tried blended dates, which tasted great, but required soaking and a food processor. Three tablespoons of pure maple syrup provides balanced sweetness, keeps prep one-bowl, and reduces fuss.
Keep the crunch on the outside
Mixing crispy rice cereal into the dough works, but coating the balls in a chocolate-crisp shell gives the best contrast: a soft center and a crunchy exterior in every bite.
Natural protein combo
Almond butter, almond flour, and hemp hearts create a protein-forward base without the chalky taste of powder. This trio also adds fiber, healthy fats, and omega-3s. Swap peanut butter if that’s what you have.
