  • Versatile Delight: Whether it’s a cozy breakfast with your morning coffee, a celebratory brunch item, or a comforting dessert after dinner, this cake fits every occasion.

The Magic of Apples in Baking

Apples are truly a baker’s best friend, especially during the autumn season. Their unique composition makes them ideal for incorporating into cakes, pies, and crumbles. They release moisture as they bake, which contributes to an incredibly tender and never-dry final product. Beyond moisture, apples bring a natural sweetness and a subtle tartness that balances rich batters beautifully.

For this apple streusel coffee cake, selecting the right apple variety is key to achieving the perfect texture and flavor. While many apples are delicious for snacking, some hold up better to the heat of the oven, maintaining their shape and offering a pleasant bite rather than turning into mush. Excellent choices for baking include:

  • Honeycrisp: Known for its crisp texture and sweet-tart flavor, Honeycrisp apples maintain their structure well during baking and add a vibrant taste.
  • Granny Smith: If you prefer a more tart contrast to the sweetness of the cake and crumb topping, Granny Smith is an excellent choice. Its firm flesh stands up perfectly to baking.
  • Braeburn: These apples offer a balanced sweet-tart flavor and good firmness, making them another reliable option for baked goods.
  • Fuji or Gala: For a sweeter cake, Fuji or Gala apples can also be used, though they may soften slightly more than Honeycrisp or Granny Smith.

I personally love using a large Granny Smith apple for its lovely tartness that cuts through the sweetness of the cake and crumb topping. While peeling the apples is optional, I find it creates a smoother texture in the cake, allowing the apple flavor to blend seamlessly.

Recipe Ingredients: A Closer Look

Crafting this moist apple streusel coffee cake requires a thoughtful selection of pantry staples, each playing a crucial role in achieving that perfect balance of flavor and texture. Here’s a detailed breakdown of what you’ll need:

  • All-purpose flour: The foundation of our cake. It’s vital to measure your flour correctly – spoon and level it into your measuring cup rather than scooping directly from the bag. This prevents compacting the flour, which can lead to a dense, heavy cake.
  • Baking powder and baking soda: These essential leavening agents work in tandem to create a light, airy crumb. Baking powder provides the initial lift, while baking soda, activated by the acidity in the buttermilk, ensures further rise and contributes to tenderness.
  • Salt: A pinch of salt is crucial for enhancing the overall flavor profile. It not only balances the sweetness of the sugars but also accentuates the natural sweetness and spice of the apples and cinnamon.
  • Ground cinnamon and nutmeg: These warming spices are the heart of this fall-inspired cake. I’ve included a moderate amount for a delicate, aromatic flavor, but you have the flexibility to increase them if you desire a bolder spice presence. Consider adding a touch of allspice or ginger for even more depth.
  • Unsalted butter: Butter forms the rich base of both the cake and the crumb topping. Using unsalted butter gives you precise control over the salt content in the recipe, as the amount of salt in salted butter can vary significantly between brands. Remember to use cold butter for the crumb topping and softened, room-temperature butter for the cake batter.
  • Sugar: We use a combination of granulated sugar and brown sugar in this recipe. Granulated sugar provides sweetness and contributes to the cake’s tender texture, while brown sugar adds a deep, molasses-rich flavor that pairs beautifully with the apples and keeps the cake incredibly moist.
  • Eggs: Eggs are vital for structure, richness, and binding the ingredients together. Ensure your eggs are at room temperature before adding them to the batter; this helps them emulsify better with the butter and sugar, leading to a smoother, more uniform batter.
  • Vanilla extract: For the finest flavor, opt for pure vanilla extract. Its warm, aromatic notes elevate all the other flavors in the cake, adding a layer of sophisticated sweetness.
  • Buttermilk: Buttermilk is a secret weapon in baking, known for creating exceptionally moist and tender baked goods. Its acidity reacts with the baking soda, promoting a superior rise and a finer crumb. If you don’t have buttermilk on hand, don’t worry! You can easily make your own buttermilk substitute at home using milk and lemon juice or vinegar.
  • Apples: As discussed, choose firm, flavorful baking apples like Honeycrisp, Granny Smith, or Braeburn. Peel and chop them into small, even pieces to ensure they cook through evenly and are distributed throughout the cake.

How to Make Homemade Apple Coffee Cake

Making this apple cinnamon coffee cake is a rewarding process, broken down into two main parts: preparing the irresistible crumb topping and then mixing the tender apple cake batter. Follow these steps for a perfect bake every time:

Crafting the Perfect Crumb Topping

Begin by preparing the crumb topping, as it benefits from being chilled. In a medium mixing bowl, combine the all-purpose flour, light brown sugar, and ground cinnamon. Whisk these dry ingredients together thoroughly to ensure the spices are evenly distributed. Next, add the cold, cubed unsalted butter. The key here is to keep the butter cold, which helps create distinct, crumbly pieces rather than a smooth dough. Use a pastry cutter or a fork to work the butter into the dry ingredients. Continue until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible. If you don’t have a pastry cutter, you can use your fingertips, but work quickly to prevent the butter from warming too much. Once the mixture is perfectly crumbly, place the bowl in the refrigerator to keep it cold while you prepare the cake batter.

Mixing the Moist Apple Cake Batter

Preheat your oven to 350°F (177°C). Lightly grease and flour a 9-inch springform pan, or spray it generously with non-stick cooking spray. A springform pan is highly recommended for easy removal and presentation of the finished cake.

In a large mixing bowl, whisk together the dry ingredients for the cake: all-purpose flour (remember to spoon and level!), baking powder, baking soda, salt, ground cinnamon, and nutmeg. Set this bowl aside.

In the bowl of a stand mixer fitted with the paddle attachment (or using a large bowl and a handheld electric mixer), cream together the softened, room-temperature unsalted butter with both the granulated sugar and brown sugar. Beat this mixture on medium-high speed for about 4 to 5 minutes, or until it becomes noticeably light in color and fluffy. This step is crucial as it incorporates air into the butter and sugar, which contributes significantly to a lighter and softer cake texture.

Next, beat in the room-temperature eggs, one at a time, allowing each to fully incorporate before adding the next. This ensures proper emulsification. Then, mix in the pure vanilla extract. Don’t forget to stop and scrape down the sides of the bowl with a spatula occasionally to ensure all ingredients are thoroughly combined.

With the mixer on low speed, begin adding the dry ingredients alternately with the room-temperature buttermilk. Start by adding about one-third of the dry ingredients, mix just until combined, then add half of the buttermilk, mix again. Repeat with another third of the dry ingredients, followed by the remaining buttermilk, and finally, the last third of the dry ingredients. Mixing in this alternating pattern helps prevent overmixing the batter, which can develop the gluten in the flour too much and result in a tough cake. Mix only until the ingredients are just combined; a few streaks of flour are acceptable.

Gently fold in the chopped apples using a spatula. Be careful not to overmix at this stage to keep the cake tender.

Pour the cake batter evenly into your prepared springform pan. Retrieve the chilled crumb topping from the refrigerator and sprinkle it generously and evenly over the top of the batter.

Bake the cake for 45 to 55 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. Baking times can vary, so keep an eye on your cake. If you notice the topping browning too quickly around the 40-minute mark, you can loosely tent the cake with aluminum foil to prevent excessive browning.

Once baked, remove the cake from the oven and place it on a wire rack to cool for at least 20 to 30 minutes before carefully releasing it from the springform pan. Allow the cake to cool completely on the wire rack before slicing and serving to ensure it sets properly and is easy to cut. You can enjoy this cake plain, dust it with a sprinkle of powdered sugar for a simple finish, or drizzle it with a light vanilla glaze for extra sweetness.

Expert Baking Tips for Success

Achieving a perfectly moist and flavorful apple coffee cake is simple with these expert tips:

  • Accurate Flour Measurement: The “spoon and level” method is paramount. Instead of scooping flour directly from the container, which can pack it down and add too much, gently stir the flour, then spoon it into your measuring cup until overflowing. Use the straight edge of a knife to level off the excess. This ensures the correct amount for a tender cake.
  • Creaming Butter and Sugars: Don’t rush this step! Beating the softened butter and sugars for 4-5 minutes until light and fluffy is crucial. This process incorporates air into the mixture, creating tiny air pockets that expand during baking, resulting in a lighter, softer, and more tender cake crumb.
  • Room Temperature Ingredients: Ensure your butter, eggs, and buttermilk are at room temperature. Room temperature ingredients emulsify more easily, creating a smooth, cohesive batter. Cold ingredients can cause the batter to curdle and affect the final texture.
  • Choose the Right Apples: As mentioned, firm baking apples like Honeycrisp, Granny Smith, or Braeburn are best. They hold their shape and provide a delightful texture after baking. Peel your apples for a smoother cake texture, or leave them on for a rustic feel. Chop them into uniform, small pieces (about 1/2-inch) for even distribution and cooking.
  • Don’t Overmix the Batter: Once you start adding the dry ingredients and buttermilk, mix only until just combined. Overmixing develops gluten, which can lead to a tough and chewy cake. A few small streaks of flour are preferable to an overmixed batter.
  • The Benefits of a Springform Pan: While a regular 9-inch round pan can work, a springform pan makes removing the cake much easier, especially with a delicate crumb topping. It helps maintain the cake’s beautiful shape and presentation.
  • Cooling is Key: Resist the urge to slice into your warm coffee cake immediately. Allowing it to cool on a wire rack for at least 20-30 minutes before releasing from the pan (and ideally cooling completely before slicing) helps the cake structure set. This prevents it from crumbling and makes for cleaner slices.

Variations and Customizations

This apple coffee cake recipe is wonderfully adaptable, allowing you to tailor it to your preferences. Here are a few ideas to get you started:

  • Nutty Additions: For an extra layer of flavor and crunch, fold in 1/2 cup of chopped walnuts or pecans into the cake batter along with the apples.
  • Dried Fruit Infusion: Add 1/4 to 1/2 cup of dried cranberries or golden raisins to the batter for a chewy texture and additional fruity notes.
  • Spice it Up: While cinnamon and nutmeg are classics, consider adding a pinch of allspice, ground ginger, or a dash of cardamom to the cake batter for a more complex spice profile.
  • Citrus Zest: A tablespoon of orange or lemon zest folded into the batter can brighten the flavors and add a fresh aromatic touch.
  • Glaze Options:
    • Simple Vanilla Glaze: Whisk together 1 cup of powdered sugar with 2-3 tablespoons of milk or cream and 1/2 teaspoon of vanilla extract until smooth. Drizzle over the cooled cake.
    • Cream Cheese Glaze: Beat 2 oz softened cream cheese with 1/4 cup softened butter, 1 cup powdered sugar, and 1/2 teaspoon vanilla extract until fluffy. Spread over the cooled cake.
    • Maple Glaze: Substitute milk with maple syrup in the simple vanilla glaze for a delicious fall twist.
  • Chocolate Chips: For a decadent twist, stir in 1/2 cup of mini chocolate chips with the apples.

Serving Suggestions

This versatile Apple Coffee Cake is perfect for a multitude of occasions. Serve it warm with a scoop of vanilla bean ice cream or a dollop of whipped cream for an indulgent dessert. For breakfast or brunch, pair it with a steaming cup of coffee or tea, a mimosa, or alongside fresh fruit salad. It’s also delightful as a midday treat, or simply enjoyed on its own whenever a craving for something sweet and comforting strikes.

Storage and Freezing Guidelines

How Long Does Apple Cinnamon Coffee Cake Last?

This apple streusel coffee cake is undeniably at its best when served fresh, ideally on the same day it’s baked. Its tender crumb and crisp topping are most enjoyable then. However, leftovers can be stored for a few days. Cover the cake tightly with plastic wrap or place it in an airtight container to prevent it from drying out. It can be kept at room temperature for up to 2 days, or in the refrigerator for 2 to 3 days. Reheating individual slices briefly in the microwave can help restore some of its initial moistness.

Can I Freeze This Cake?

Yes, this coffee cake freezes beautifully, making it an excellent option for meal prep or enjoying a slice whenever a craving hits. To freeze, ensure the cake is completely cooled. You can freeze the entire cake or individual slices. Wrap the cake or slices tightly with multiple layers of plastic wrap, then an additional layer of aluminum foil to prevent freezer burn. Place the wrapped cake in a freezer-safe bag or airtight container. It will keep well in the freezer for up to 3 months. To serve, thaw the cake at room temperature on the counter for several hours or overnight before enjoying. For best results, avoid thawing in the microwave as it can alter the texture.

  • Bake for 45 to 55 minutes (mine is usually perfect at 50 minutes) or until a toothpick inserted into the center comes out clean. If needed, cover loosely with foil around the 40-minute mark to prevent excess browning.
  • Remove the cake from the oven and cool on a wire rack for at least 20 to 30 minutes before releasing it from the springform pan. Allow to cool completely, then slice and enjoy!

Notes

To store the cake: Crumb cake is best served the same day it is prepared, but may be covered tightly and stored at room temperature or in the refrigerator for 2-3 days.

To freeze the cake: Wrap the cake or slices of cake tightly with plastic wrap and store in a freezer bag/container in the freezer for up to 3 months. Thaw to room temperature on the counter before serving.

Butter: I recommend using unsalted butter in this recipe. If you only have salted butter on hand, reduce the salt in the cake batter to 1/4 teaspoon.

Apples: I used a large Granny Smith apple for this cake. Some other great options are Honeycrisp or Braeburn apples.
