  • ⅓ of a jalapeno, diced (remove seeds if you don’t want it too spicy)

Garlicky Beans

  • 3 tbsp extra virgin olive oil, divided
  • 1 large clove of garlic, minced
  • 1 cup black beans
  • Coarse salt and freshly-cracked pepper to taste

Instructions

  1. In a small saucepan, combine your favorite salsa, corn, and diced jalapeno. Allow this mixture to simmer gently over medium heat for approximately 10 minutes, letting the flavors meld and warm through. This step creates a vibrant and flavorful base for your huevos rancheros.
  2. Meanwhile, heat 2 tablespoons of extra virgin olive oil in a small frying pan over medium-high heat. Once the oil is shimmering (after about 30 seconds), add your minced garlic. Stir continuously for 1-2 minutes until the garlic becomes fragrant and lightly golden, being careful not to burn it.
  3. Add the black beans to the pan with the fragrant garlic. Stir well, using the back of a spoon to mash some of the beans. This technique creates a delightful texture, with some beans remaining whole and others forming a creamy, mashed consistency. Season generously with coarse salt and freshly-cracked pepper to taste. Continue to cook for 4-5 minutes, allowing the beans to brown slightly and become a bit crispy.
  4. In a separate large frying pan, heat the remaining 1 tablespoon of olive oil over medium-high heat for about 30 seconds. Carefully crack your eggs directly into the hot pan. Cook for approximately 3-4 minutes, or until the egg whites are completely set and opaque, and the yolks are cooked to your desired consistency. I personally love a soft, runny yolk that beautifully complements the other ingredients.
  5. As your eggs and beans finish cooking, begin preparing your “tortilla” base. Arrange the Inspired Greens Batavia leaves on your serving plates. Stack 4 leaves per “tortilla” (or more if you prefer a larger, more robust base), ensuring the top rounded edge faces outward and the stems slightly overlap to form a stable, circular foundation. This creates a refreshing and crunchy alternative to traditional tortillas.
  6. Now for the exciting part – assembly! Generously top each stack of lettuce leaves with a portion of the garlicky black beans, followed by one perfectly cooked egg, several slices of creamy avocado, a dollop of your warm salsa, and a sprinkle of crumbled feta or cotija cheese. Garnish with fresh cilantro and, if you enjoy a little extra kick, a dash of chili flakes. Finish with a final sprinkle of salt and pepper to enhance all the wonderful flavors.
