  • 1 large shallot, minced
  • 1 cup arborio rice
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • 3 cups + 1/21 cup vegetable or mushroom stock
  • Salt and freshly ground pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese (or nutritional yeast for vegan)
  • 12 tbsp salted butter (or vegan butter alternative)

Instructions

  1. Preheat your oven to 350 degrees F (175°C).
  2. Line a baking sheet with parchment paper. Add the sliced mushrooms, minced garlic, chopped fresh thyme, 2 tablespoons of olive oil, salt, and pepper. Toss well to ensure the mushrooms are evenly coated. Roast in the preheated oven for 25-30 minutes, stirring them halfway through, until they are browned and slightly crispy on the edges.
  3. Meanwhile, heat the remaining 2 tablespoons of olive oil in a Dutch oven or a heavy-bottomed oven-safe pot over medium-high heat for about 2-3 minutes. Add the minced shallots and cook, stirring occasionally, until they become soft and translucent (approximately 3-4 minutes).
  4. Add the arborio rice to the Dutch oven. Cook and stir frequently for another 3-4 minutes until the edges of the rice grains become translucent and lightly toasted, ensuring they don’t burn.
  5. Pour in the dry white wine. Cook, stirring constantly, until most of the wine has evaporated and been absorbed by the rice. Then, add the 3 cups of vegetable or mushroom stock and bring the mixture to a simmer. Once simmering, turn off the heat, cover the Dutch oven tightly, and transfer it to the oven to bake until most of the liquid is absorbed (approximately 18-20 minutes).
  6. Remove the Dutch oven from the oven once the liquid is almost completely absorbed and the rice is tender but still al dente. Place the Dutch oven back on the stove over medium-high heat. Stir in the roasted mushrooms and the remaining vegetable stock. Start by adding 1/2 cup of stock, stirring continuously and adding more as needed, until you achieve a creamy, luscious consistency. The liquid should be mostly absorbed, and the risotto should flow gently. Season with salt and pepper to taste.
  7. Remove the Dutch oven from the heat. Stir in the freshly grated Parmesan cheese and the butter until both are fully melted and smoothly incorporated into the risotto.
  8. Serve immediately with a final sprinkle of fresh thyme, extra Parmesan cheese if desired, and your favorite protein (I highly recommend serving it with pan-seared scallops for an elevated meal!).

To make it vegan:

  • Butter: Swap for an equal amount of good quality vegan butter, or simply omit it for a lighter, dairy-free version.

  • I’ve successfully made this recipe using a combination of half mushroom stock and half vegetable stock, which yields a wonderfully rich and deep flavor. However, using either mushroom or vegetable stock on its own also produces excellent results.
