Description

This recipe for meal prep egg frittata couldn’t be simpler! The mini egg muffins are nutritious and packed with herbs and leafy greens. Make these ahead and store them in the fridge or freezer for an easy, quick breakfast. Recipe yields 12 mini egg frittatas.


Ingredients

  • 1 tbsp butter
  • ½ cup white onion (about ½ of a small onion), diced
  • 8 extra large eggs (9 if large, 10 if small or medium)
  • 4 cups Inspired Greens Multileaf Trio Lettuce Leaves, sliced into thin shreds
  • ½ cup fresh basil, chopped into small pieces
  • ½ cup Parmigiano Reggiano + 2 tbsp for sprinkling, grated
  • ½ cup havarti cheese, grated
  • Coarse salt and freshly-cracked pepper to taste (approx. ⅛ tsp each)

Instructions

  1. Preheat your oven to 350 degrees F (175°C).
  2. Grease your muffin tins generously with olive oil or use parchment paper muffin liners to prevent sticking.
  3. Heat the butter in a small saucepan over medium-high heat. Once completely melted and starting to bubble (about 1-2 minutes, watch carefully to prevent burning), add the diced onion. Cook until the onion is translucent and begins to lightly brown, approximately 5-7 minutes.
  4. Meanwhile, in a large mixing bowl, beat your eggs thoroughly. Add the chopped lettuce, basil, and both cheeses (reserving 2 tablespoons of Parmesan for sprinkling later). Season with salt and freshly cracked pepper. Whisk everything with a fork until well combined. Don’t worry if there seems to be a large amount of lettuce; it will shrink down considerably during baking.
  5. Carefully distribute the egg mixture evenly among the prepared muffin tins. Sprinkle the tops of each frittata with the remaining reserved Parmesan cheese.
  6. Place the muffin tin in your preheated oven and bake for 17 minutes. The frittatas should be moist but with no uncooked egg remaining. If needed, bake for an additional 2-3 minutes until the eggs are fully set throughout.
  7. Remove the frittatas from the oven and allow them to sit in the pan for 5-10 minutes. This helps them set further. Carefully remove the frittatas from the pan by gently loosening the edges with a spatula (this step is not needed if using parchment paper liners).
