  15. Scrape down the sides of the bowl, add the vanilla extract, and continue mixing on medium speed until fully combined (about 20 to 30 seconds).
  16. Adjust the mixer to the lowest speed and continue mixing for 5 to 7 minutes. This low-speed mixing helps to remove any excess air bubbles, resulting in an exceptionally smooth buttercream. If needed, a rubber spatula can be used to manually beat out any stubborn air bubbles.
  17. To assemble the cake: Use a serrated knife or a cake leveler to carefully level the tops of each cooled cake layer, creating flat surfaces. Place one cake layer on your chosen cake stand or serving plate. Top with approximately ¾ cup to 1 cup of frosting, spreading it smoothly into an even layer. Carefully place the second layer on top and repeat with another ¾ cup to 1 cup of frosting. Finally, place the third cake layer on top and use the remaining frosting to generously coat and frost the top and sides of the entire cake. Decorate with extra sprinkles as desired!

  • Storage Instructions: Store your completed funfetti cake in an airtight container in the refrigerator for up to 4 days. For optimal taste and texture, allow the cake to come to room temperature for 15-30 minutes before serving.
  • Freezing Instructions: Baked and cooled cake layers can be wrapped tightly in plastic wrap and then aluminum foil, and frozen for up to 3 months. Thaw them overnight in the refrigerator before unwrapping and frosting. The prepared Swiss meringue buttercream can also be stored in a large freezer bag and frozen for up to 3 months. Thaw it in the refrigerator and then re-whip it with an electric mixer until smooth before use.
  • Cake Flour Substitute: If you find yourself without cake flour, you can easily make your own substitute at home using all-purpose flour and cornstarch.
  • To make a 9×13-inch cake: Grease a 9×13-inch pan with nonstick cooking spray. Pour the entire batter into the pan and spread it out into one even layer. Bake at 350°F (180°C) for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • To make a two-layer cake: If you prefer a two-layer cake, divide the batter evenly between two 9-inch round cake pans. Adjust the baking time slightly to 28 to 33 minutes.
  • To make cupcakes: This versatile recipe will yield approximately 32 standard-sized cupcakes. Line your muffin tins with paper liners and fill each liner about 2/3 of the way full. Bake for a shorter duration, typically 16 to 20 minutes, or until a toothpick inserted into a cupcake comes out clean.
