Ingredients
- 250 g cheese tortellini
- 1/2 cup pepperoncini, thinly sliced
- 1 x 15 oz can chickpeas, drained and rinsed
- 75 g (about 2.5 oz) Genoa salami, thinly sliced
- 1/3 cup thinly sliced red onion
- 1 cup mini bocconcini or mozzarella pearls, drained
- 1 1/2 cups cherry tomatoes, halved
- 1 red bell pepper, thinly sliced and cut into thirds
- 4 cups iceberg lettuce, shredded (optional)
- 1/2 cup grated Parmesan cheese
Dressing
- 3 tbsp olive oil
- 2 tbsp plain Greek yogurt
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 tsp Italian seasoning
- 1 tsp salt
- Pepper to taste
Instructions
- Cook the tortellini according to package directions. Drain and set aside to cool slightly.
