What Makes This Recipe So Good
The mix of textures is what makes these Garlic Parmesan Roasted Carrots so good. The carrots become tender and naturally sweet in the oven, while the parmesan and panko create a crisp, golden coating around every piece.
Carrots provide fiber and vitamin C, along with carbohydrates for energy. Their fiber can also help support healthy cholesterol levels, while carrots are naturally low in sodium and provide potassium. The parmesan adds a little protein and calcium, too. With plenty of garlic, parmesan, and crunchy breadcrumbs, they certainly do not taste like a boring healthy side. The crispy parmesan coating also makes them a fun way to serve carrots to kids who might not usually get excited about vegetables.
What Goes Into Garlic Parmesan Roasted Carrots

You only need a handful of simple, everyday ingredients to turn basic carrots into a crispy, crave worthy side dish.
- Carrots: Roasting brings out their natural sweetness while keeping the centers tender, giving the good base for all that crunchy topping.
- Olive Oil: This helps the carrots roast evenly while carrying the garlic flavor into every bite and encouraging the parmesan to turn golden instead of dry.
- Garlic: Fresh minced garlic infuses the oil as it roasts, adding savory depth that balances the sweetness of the carrots.
- Parmesan Cheese: Finely grated parmesan melts and crisps in the oven, creating that salty, golden coating that makes these garlic parmesan roasted carrots irresistible.
What Kind Of Carrots Should we Buy?
Look for carrots that feel firm and crisp, with smooth skin and no soft spots, deep cracks, or large green patches near the tops. Regular orange carrots are good, but bunched carrots and rainbow carrots also work well. Whatever you choose, try to buy carrots of a similar thickness so they cook at the same rate.
Bagged baby-cut carrots can be used in a pinch. Pat them dry and slice any thicker ones lengthwise. Their rounded shape gives them less contact with the pan, so they may not brown quite as deeply as whole carrots that have been cut into pieces.

Kitchen tip
- Dry the carrots well after washing them. Extra moisture can make the coating slide off and cause the carrots to steam instead of brown.
- Cut the carrots as evenly as possible. Halve or quarter the thicker ends so they cook through at the same time as the narrower pieces.
- Freshly grated parmesan works best here. It melts and clings to the carrots more evenly than packaged pre-shredded cheese.
- Use a large enough baking sheet to leave a little room between the carrots. If they are packed too closely together, they will soften but will not develop as many crisp edges.
- You can line the baking sheet with parchment paper for easier cleanup, but make sure the carrots still have enough room to spread out and roast.
- Make sure the minced garlic and loose crumbs are coated with oil and sitting close to the carrots. Small pieces left scattered around the pan can brown much faster.
- For an even crunchier finish, hold back some of the panko and sprinkle it over the carrots after tossing them halfway through roasting.
- If you have any leftovers, let them cool before transferring them to an airtight container in the refrigerator.
Recipe FAQ's
Can we Use Baby Carrots Instead Of Whole Carrots?Yes, but keep in mind that baby carrots are denser and release more moisture. They may take a little longer to roast and will not get quite as caramelized as halved whole carrots.
Why Are My Carrots Soft Instead Of Crispy? This usually happens when the pan is overcrowded or the carrots are cut unevenly. Spacing them out and using a hot oven helps the moisture evaporate so the coating stays crisp.
How Do we Keep The Parmesan From Burning?Finely grated parmesan works best and should be mixed evenly with the oil so it melts and crisps instead of scorching. If your oven runs hot, you can loosely tent the carrots with foil for the last few minutes.
