Cook notes

Can we Use Frozen Shrimp?

Absolutely! Frozen shrimp work beautifully here. The most important step is to make sure they are completely thawed before you start. Pat them dry with a paper towel to get that good, beautiful sear.

Can we Use Chicken Instead Of Shrimp?

Yes, this sauce is good with chicken! use bite-sized pieces of boneless, skinless chicken breast or thighs. Season and sear the chicken until it's cooked all the way through, set it aside, and then proceed with the sauce as written.

How Do we Store Leftovers?

Leftovers are just as good the next day! Store the curry in an airtight container in the refrigerator for up to 3 days. For a reliable results, reheat it gently on the stovetop over low heat to avoid making the shrimp tough.
