This super easy homemade jam is packed with Omega-3s and fiber, and spreads like a dream! It’s vegan and kid-friendly, making it a perfect healthy addition to any meal.
Ingredients
- 1 ½ cups raspberries, frozen
- 2 tbsp water
- ½ – 1 tsp vanilla extract (depending on how vanilla-y you like it)
- 2 tbsp chia seeds
Instructions
- Add frozen raspberries, water, and vanilla extract to a medium-sized pot. Place over medium-high heat. Bring the mixture to a low boil, stirring frequently to prevent sticking and encourage even cooking.
- Once boiling, reduce the heat to low and let the mixture simmer gently for about 5 minutes, or until the raspberries have softened considerably. At this point, lightly mash the berries with the back of a fork or a potato masher. You can achieve your desired consistency here: mash thoroughly for a smoother jam, or leave some larger pieces for a chunkier texture.
- Stir in the chia seeds thoroughly. Continue to cook on low heat for another 5 minutes, stirring occasionally. The jam will begin to thicken as the chia seeds absorb the liquid and create a gel. Ensure it doesn’t stick to the bottom of the pan.
- Remove the pot from the heat and allow the jam to cool completely to room temperature. As it cools, it will continue to thicken. For longer storage, you can also freeze portions of the jam in freezer-safe containers and thaw them as needed.
