Description

Like savoring pumpkin pie for breakfast, this deconstructed version is both nourishing and deeply satisfying. I often make extra crumble to enjoy with yogurt or smoothie bowls. This recipe is also completely vegan!


Ingredients

  • 1 cup pumpkin puree
  • 1 cup unsweetened vanilla nut milk (cashew milk is recommended for its creamy texture)
  • ¼ cup ofCalifornia Prunes
  • ¼ tsp pumpkin pie spice
  • Pinch of salt (less than ⅛ of a tsp)
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 tbsp Chia seeds
  • A dollop of plain or vanilla Greek yogurt or whipped cream to garnish (or dairy-free alternative)

Crumble

  • ½ cup pecans, roughly chopped
  • ½ cup almond flour
  • ¼ cupCalifornia Prunes, roughly chopped
  • ¼ tsp ground cinnamon
  • ⅛ tsp salt
  • 1 tbsp maple syrup
  • 2 tbsp coconut oil, melted


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet or small baking pan with parchment paper.
  2. In a medium mixing bowl, combine all crumble ingredients. Mix thoroughly with a fork until all ingredients are well combined and evenly coated with the coconut oil.
  3. Spread the crumble mixture in a single layer on the prepared baking sheet or pan. Bake in the preheated oven for 12-15 minutes, or until it turns golden brown and slightly crispy.
  4. While the crumble bakes, prepare the pudding. Place all pudding ingredients (except for Greek yogurt or whipped cream) into a blender or food processor. Blend until the mixture is completely smooth and creamy, which should take approximately 60 seconds. (A powerful blender like a Vitamix works great, but any good blender should suffice given the soft ingredients.)
  5. Once the crumble is cooked, remove it from the oven and let it cool for 5-10 minutes. This helps it crisp up further.
  6. When ready to serve, begin by dividing half of the cooled crumble evenly among four serving dishes or jars. Next, spoon half of the pumpkin pudding mixture over the crumble in each dish. Repeat this process, adding another layer of crumble followed by the remaining pudding, reserving a small amount of crumble for the final topping.
  7. Finish each serving with a generous dollop of Greek yogurt or whipped cream, a sprinkle of the reserved crumble, or a dash of cinnamon or pumpkin pie spice for an extra aromatic touch.
