Description

One-pan creamy vegan red pepper pasta that’s easy enough for a weeknight and impressive enough to entertain your weekend guests! This delicious and creamy pasta offers built-in protein, fiber, greens, and vitamin C for a truly satisfying and complete meal.


Ingredients

  • 8 oz (224g) fettuccine noodles
  • ¾ – 1 cup pasta boiling water, reserved
  • 255g (just over 1 cup) Summer Fresh Roasted Red Pepper Hummus
  • 4 cups fresh spinach (if using large leaves, roughly chop)
  • ¼ cup sun-dried tomatoes, chopped
  • ⅓ cup feta cheese or dairy-free cheese alternative, crumbled (optional, for vegan option)
  • Salt & pepper to taste
  • Lemon wedges and/or lemon zest, for serving
  • Optional toppings: Red pepper flakes, fresh parsley or basil
  • Optional protein additions: Edamame beans, prawns, scallops or grilled chicken (the dish is delicious and complete as is!)

Instructions

  1. Cook pasta according to package directions in a large pot. During the last 30 seconds of cooking time, add the fresh spinach to wilt.
  2. Before draining, reserve 1 cup of the starchy pasta cooking water. Then, drain the noodles and spinach thoroughly.
  3. Return the drained noodles and spinach to the pot. Add ¾ cup of the reserved pasta water, the roasted red pepper hummus, chopped sun-dried tomatoes, and crumbled feta (or vegan alternative). Stir well to coat the noodles evenly. Add more pasta water if needed to achieve your desired sauce consistency. Season with salt and pepper to taste.
