Description
A perfectly balanced, colorful, and delicious Buddha Bowl featuring roasted sweet potatoes and chickpeas, fresh vegetables, and a creamy lemon tahini dressing. This vegan recipe is ideal for a wholesome lunch or dinner and is excellent for batch prepping, ensuring easy, nutritious meals throughout your busy week.
Ingredients
- 2 cups brown rice, cooked
- 1 medium sweet potato, cubed
- 1 19 oz. can of chickpeas, drained and rinsed
- 1 Tbsp. avocado oil
- sea salt and fresh cracked pepper to taste
- 2 cups purple cabbage, thinly sliced
- 2 carrots, grated
- 1 avocado, sliced
- 1/4 cup of pumpkin seeds
- 1/2 cup of cilantro, chopped *optional
Dressing
- 2 tbsp olive oil
- 2 tbsp tahini
- juice of 1/2 of a lemon
- 1 clove of garlic, minced
- salt and pepper to taste
- 2 tbsp warm water
Instructions
- Pre-heat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- In a medium-sized mixing bowl, combine the cubed sweet potato, drained and rinsed chickpeas, avocado oil, sea salt, and fresh cracked pepper. Toss everything together thoroughly until the sweet potatoes and chickpeas are evenly coated with the oil and seasonings. Spread the mixture out onto the prepared baking sheet in a single layer, ensuring enough space between pieces for even roasting.
- Roast in the pre-heated oven for 45 minutes to 1 hour, or until the sweet potatoes are tender and easily pierced with a fork, and the chickpeas are beautifully browned and slightly crispy on the outside. Stir once halfway through cooking for even browning.
- While the vegetables are roasting, cook the brown rice according to the package directions. For perfect fluffy rice, aim for a slightly al dente texture.
- Prepare the lemon tahini dressing: In a small bowl, combine the olive oil, tahini, fresh lemon juice, minced garlic, salt, and pepper. Gradually whisk in the warm water, starting with 1 tablespoon, until the dressing reaches your desired creamy consistency. If it’s too thick, add a little more warm water; if too thin, add a touch more tahini. Set aside.
- Prepare the fresh vegetables: Thinly slice the purple cabbage, grate the carrots, and slice the avocado. Chop the cilantro if using.
- Once the roasted sweet potatoes and chickpeas are ready, it’s time to assemble your Buddha Bowls! Start with a generous base of cooked brown rice in each bowl. Arrange the roasted sweet potatoes and chickpeas, sliced purple cabbage, grated carrots, and sliced avocado artfully on top of the rice. Finish by drizzling generously with the prepared lemon tahini dressing and garnish with pumpkin seeds and fresh cilantro (if desired). Serve immediately and enjoy the wholesome goodness!
