Description

These healthy lettuce wraps are one of my favorite ways to enjoy meal-prepped ground beef. This recipe is nutritious, flavorful, and so easy!


Ingredients

  • 2 tsp olive oil
  • 2 small cloves garlic, minced
  • 2 tsp ginger, grated or minced
  • 1 cup mushrooms, finely diced
  • 1 cup red bell pepper, roughly chopped
  • 1 cup purple cabbage, roughly chopped
  • 1 cup brown rice, cooked
  • 10 cashews, chopped
  • 6 oz ground beef (approx. 1 cup), cooked (can substitute with any ground meat or plant-based veggie crumbles)
  • 1 tsp soy sauce
  • 1 tbsp hoisin sauce
  • 4 pieces of romaine lettuce (or any firm lettuce like butter or iceberg)

Instructions

If you do not have any of your ingredients prepped ahead of time, start out by:

  1. Cooking your rice according to package directions. (A good rule of thumb: 1/3 cup dry rice typically yields 1 cup cooked. I highly recommend cooking extra to have for additional meals later in the week!)
  2. Browning your ground beef. Add it to a hot pan and allow it to brown thoroughly on one side before flipping or stirring. Repeat this process on the other side. Once nicely browned, remove the beef from the pan and proceed to cook your vegetables. You will add the beef back in at Step 3 of the main recipe.
  3. Once cooled, place the other half of the ground beef mixture in an airtight container (separate from the lettuce to prevent wilting) to be stored in the fridge for tomorrow’s lunch.

If main ingredients have already been prepped during your weekly meal prep, begin here:

  1. Heat the olive oil in a large frying pan over medium-high heat for 1-2 minutes until hot and shimmering. Add the minced garlic and grated ginger, and cook until fragrant, about 2-3 minutes.
  2. Add the finely diced mushrooms to the pan and cook for 5 minutes, stirring occasionally, until they are slightly browned and have released some of their moisture. Next, add the roughly chopped red bell peppers and purple cabbage, and sauté for an additional 3 minutes, until tender-crisp.
  3. Stir in the cooked brown rice, chopped cashews, pre-cooked ground beef, soy sauce, and hoisin sauce. Continue to sauté the mixture until all ingredients are thoroughly heated through and well combined.
  4. If preparing this meal for two servings immediately, arrange two pieces of lettuce on each plate and evenly divide the mixture between them. If you intend to save an extra portion for leftovers, plate two pieces of lettuce with half of the mixture for immediate enjoyment, and pack the remaining mixture securely in an airtight container for tomorrow’s delicious lunch. Serve immediately and savor!
