I absolutely love kale, and there’s a good reason this green has garnered so much attention recently. Kale is significantly higher in fiber than most other leafy greens and serves as an excellent source of antioxidant vitamins A and C, making it a stellar choice for a wholesome and satisfying salad.


Ingredients

  • 2 large bunches kale (approx. 10 cups), tough stems removed, chopped

  • 1 tbsp avocado oil, or other high-heat cooking oil
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.
  2. In a bowl, combine the thoroughly dried chickpeas, capers, avocado oil, a pinch of salt, and pepper. Stir well to ensure everything is evenly coated.
