Can you believe it’s already December? The air is filled with a unique blend of excitement and nostalgia, and the holiday season has officially kicked off! This year, our festivities began with a bang, making our rounds at not one, but two lively holiday gatherings on December 1st. It’s been wonderful to witness the evolution of these parties over the years. What once were boisterous late-night affairs have gracefully transitioned into more mellow, family-friendly events as our friends’ families grow. Now, parents and grandparents join in the celebration, creating a beautiful atmosphere of shared joy and connection. And my husband, Meik, certainly isn’t complaining about having a designated driver, allowing everyone to relax and fully immerse themselves in the holiday spirit!

As you prepare for your own seasonal celebrations, consider your party-going strategy: Are you the type to arm yourself with a satisfying snack before heading out the door, ensuring you arrive feeling comfortably nourished? Or do you embrace the holiday feast with a ready appetite, eager to devour all the delicious goodies on offer? There’s no right or wrong answer, but finding a balance can often enhance your enjoyment.

Today’s featured Creamy Edamame Dip gracefully earns a spot as both a festive indulgence and a smart, healthy choice. Its vibrant green hue and luxurious texture make it a gorgeous, eye-catching addition to any holiday charcuterie board or appetizer spread. But here’s a little secret: beyond its festive appeal, it’s one of my absolute favorite go-to healthy snacks for any day of the week. Its creamy consistency and refreshing taste are truly irresistible, offering a guilt-free way to satisfy those snack cravings.

Pro Tip: I’ve found that having a repertoire of easy and delicious snack recipes readily available is a game-changer, especially during the bustling holiday season. It frees up precious time, allowing for more moments with family and less stress in the kitchen. To help you conquer your holiday snack prep, I’ve compiled a fantastic list of quick and easy meal prep snacks for you here!

I’m thrilled to once again partner with my wonderful friends at Inspired Greens to bring you this incredibly vibrant and sustaining snack. Their commitment to fresh, energizing greenhouse greens means we can enjoy high-quality produce all year round, even when the snow is falling heavily outside our Canadian “igloos.” This partnership ensures that we can consistently incorporate a healthy dose of greens into our daily routine, which is particularly beneficial during the colder months when fresh produce might feel scarce. This dip is an excellent and delicious way to get your daily dose of greens, a nutrient boost we could all use a little extra of at this busy time of year!

Beyond their delightful flavor and versatile nature, greens offer an array of incredible health benefits. Not that we truly need another reason to love them, but fresh greens provide crucial natural support for our bodies. They assist in detoxifying our livers, a particularly important function during a season often marked by richer foods and increased indulgence. Furthermore, greens are exceptionally rich in antioxidants, which are vital for priming our bodies and bolstering our immune systems to navigate the demands of this busy time of year. And of course, you know my unwavering love for fiber! This essential nutrient aids in digestion, promotes satiety, and helps maintain stable blood sugar levels, all of which contribute to a feeling of well-being.

My personal strategy for navigating holiday parties and social gatherings involves enjoying a small, balanced snack before heading out the door. I always opt for something that combines satisfying protein with plenty of fiber. This approach ensures that I arrive at the party feeling comfortably nourished, rather than ravenously hungry and prone to indiscriminately grabbing everything in sight. By mindfully enjoying a wholesome snack beforehand, I’m able to savor all of my party favorites with greater intention and moderation, truly appreciating each bite without the overwhelming urge to overeat. This edamame dip is perfect for that very purpose.

This Creamy Edamame Dip isn’t just for holiday gatherings. It’s an incredibly versatile recipe that seamlessly fits into a healthy lifestyle all year long. Imagine pairing it with crisp bell pepper strips, cucumber slices, or carrot sticks for a refreshing afternoon snack. It also makes a fantastic spread for sandwiches or wraps, adding a burst of flavor and a significant nutritional boost. For a quick and easy lunch, dollop it onto a grain bowl, alongside roasted vegetables and a lean protein. Its vibrant green color is also perfect for themed parties or simply brightening up your everyday meals. Plus, it’s naturally vegan and kid-friendly, making it a crowd-pleaser for almost everyone at your table.

Description

This exquisite creamy edamame dip, a delightful culinary inspiration from a memorable trip to Hawaii, is an absolute must-try! It’s a nutritional powerhouse, generously packed with plant-based protein and dietary fiber, making it the perfect addition to any appetizer spread. Beyond its festive appeal, it also serves as a fantastic make-ahead snack for a busy week, offering sustained energy and satiety. This dip is not only incredibly delicious but also naturally kid-friendly and entirely vegan, ensuring it caters to a wide range of tastes and dietary preferences. Its vibrant green color and fresh flavor are sure to brighten any meal or gathering.

Ingredients

Scale

  • 2 cups Inspired Greens (any blend works beautifully, Green Oak provides a lovely mild flavor)
  • 1 ½ cups edamame beans, shelled and defrosted (ensure they are fully thawed for best blending results)
  • ¼ cup extra virgin olive oil (use a good quality oil for richer flavor)
  • 1 clove garlic (for a milder taste, you can roast the garlic first)
  • Juice of ¼ – ½ lemon, adjust to taste (freshly squeezed is always best for brightness)
  • Salt and freshly ground black pepper, adjust to taste
  • Pomegranate arils to garnish (adds a beautiful pop of color and tartness)
  • Serve with: your favorite crackers, toasted crostinis, or a colorful array of fresh or roasted vegetables

Instructions

  1. Begin by placing all the prepared ingredients – the Inspired Greens, shelled and defrosted edamame beans, extra virgin olive oil, garlic clove, and initial lemon juice – into a large food processor.
  2. Blend the mixture until it achieves a wonderfully smooth and creamy consistency. During this process, be sure to stop and scrape down the sides of the food processor bowl as needed to ensure all ingredients are thoroughly incorporated.
  3. If you find your dip to be a bit too thick for your preference, you can easily thin it out. Gradually add a splash of warm water, a little more extra virgin olive oil, or additional lemon juice, blending after each addition until you reach your desired consistency.
  4. Now for the crucial tasting step! Adjust the seasoning to perfection by adding more salt, black pepper, lemon juice, or garlic to enhance the flavors according to your palate. Continue to blend briefly after each adjustment.
  5. Once perfected, carefully transfer your creamy edamame dip to a serving bowl or plate. For an elegant finish, sprinkle generously with vibrant pomegranate arils or a handful of your favorite toasted nuts. Serve immediately with a selection of your favorite crackers, crispy toasted crostini, or a colorful assortment of fresh or lightly roasted vegetables. Enjoy this wholesome and delicious creation!

Notes

  • Nutty Additions: For an extra layer of texture and flavor, I highly recommend garnishing your dip with toasted pine nuts, walnuts, or pecans. Lightly toast them in a dry pan until fragrant for the best results.
  • Flavor Variations: Feel free to experiment with other optional add-ins to customize your dip. Fresh herbs like mint, basil, or cilantro can add a refreshing twist. Alternatively, explore spices such as a pinch of paprika, a dash of curry powder, or a hint of dried dill for unique flavor profiles.
  • Finishing Touch: Drizzle your finished dip with a little extra olive oil or your favorite flavored oil (such as a chili-infused oil or a lemon-infused oil) just before serving. This not only adds an extra pop of flavor but also creates a beautiful, glossy finishing touch.
  • Storage: Store any leftover edamame dip in an airtight container in the refrigerator for up to 3-4 days. The flavors tend to meld even more beautifully overnight.
  • Make Ahead: This dip is fantastic for meal prep! Prepare a batch at the beginning of the week for easy, healthy snacking whenever hunger strikes.
