This close-up shot shows a cast iron skillet filled with a creamy, cheesy buffalo chicken dip. The dip is a vibrant orange color, with melted cheese, chunks of chicken, and green onion scallions sprinkled throughout. There are also generous dollops of blue cheese sprinkled on top. The edges of the skillet are darkened, suggesting the dip has been baked. The background is a marble surface, a few pieces of celery, and the corner of a cracker. Everything looks yummy

a reliable Rotisserie Chicken To Use

You do not need to cook chicken from scratch specifically for this recipe. A good supermarket rotisserie chicken is exactly what we reach for most of the time. If you are in the U.S., Costco rotisserie chicken is a great option, especially if you are feeding a crowd. The chickens are large, affordable, and give you more than enough meat for the dip with leftovers for another meal.

Sam's Club rotisserie chicken is another solid choice and works just as well here. If you already shop there, there is no reason to make a separate Costco trip just for the chicken.

Whole Foods can also be useful if you prefer a more seasoned chicken. That can be a good option if you want the Buffalo sauce and cheese to do most of the work.

Whichever one you buy, we like using a mixture of breast and thigh meat. Breast meat gives you those nice shreds, while a little dark meat helps keep everything from drying out when the dip goes into the oven.

What Blue Cheese Is Best For Buffalo Chicken Dip?

Blue cheese is traditional with Buffalo chicken, but there is a big difference between a mild, creamy blue and one that takes over the whole dish.

For this recipe, we like a mild to medium Danish Blue. It has enough flavour to stand up to the hot sauce without making every bite taste only of blue cheese.

A few other good options:

If you can, buy a wedge and crumble it yourself. You do not need much, and freshly crumbled blue cheese usually has a better texture than a tub that has been sitting pre-crumbled for a while.

What If we Don't Like Blue Cheese?

Leave it out. Seriously, the dip is still good without it.

You can serve ranch on the side instead or drizzle a little over the finished dip. Feta can also give you that salty topping without the blue cheese flavour, although it will obviously make the dip taste a little different.

If you are feeding a mixed crowd, we would probably leave the blue cheese off the main skillet and put a bowl of crumbles on the side. That keeps everyone happy and lets the blue cheese people add as much as they want.

Make It Your Own

Want to tweak this Buffalo Chicken Dip to suit your crowd or your fridge? Here are some easy ways to switch things up without losing that classic buffalo flavour.

On the stove

Preheating the oven.
  1. Preheat The Oven: Preheat your oven to 190°C and position the rack in the centre so the dip heats evenly and the cheese melts properly without burning.
Cooking the garlic in the pan.
  1. Build Flavour Base: In an 8-inch cast iron skillet or ovenproof pan, melt the butter over medium-high heat. Add the garlic and cook for about 30 seconds until fragrant.
Stirred in the shredded chicken.
  1. Simmer The Chicken: Stir in the shredded chicken and hot sauce. Let it simmer for about 2 minutes, allowing the sauce to reduce slightly and coat the chicken instead of pooling at the bottom.
Stirred in the cream cheese.
  1. Create The Creamy Base: Lower the heat and mix in the softened cream cheese until fully combined and smooth. Remove from heat and stir through the sour cream for extra creaminess.
Sprinkled the sauce with cheddar cheeses.
  1. Top And Bake: Sprinkle both cheddar cheeses evenly over the top, making sure the remaining cheese reaches the edges rather than piling it all in the centre. Bake for about 10 minutes until bubbling around the edges and fully melted.

Serve this Buffalo Chicken Dip with tortilla chips, crackers, celery sticks, carrot sticks, or toasted baguette slices. We like putting out a mixture of vegetables and something crunchy so everyone has an option, especially when the dip is part of a bigger appetizer spread.

Little Tricks That Make It Even Better

Recipe FAQ's

Why Did My Dip Turn Oily?

This usually happens from overbaking or using high heat. Bake just until bubbling around the edges and melted on top. Also make sure your cheeses are freshly shredded for a smoother finish.

What Is a reliable Chicken To Use?

Rotisserie chicken works beautifully because it is already seasoned and tender. If cooking your own, poached or baked chicken breast shredded finely works best when learning how to make buffalo chicken dip with the right texture.

Can we Freeze Buffalo Chicken Dip?

It is not ideal. Cream-based dips can change texture after freezing and reheating. For best results, enjoy it fresh or refrigerate leftovers for up to 3 days.
