Description

  • 1 tbsp avocado oil, divided

  • 1/2 of a small red onion, finely diced
  • 1 cup fresh mushrooms, diced (about 34 medium mushrooms)
  • 1 cup kale, tough stems removed and torn into small pieces
  • 1 small red bell pepper, finely diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/3 cup grated sharp cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat your oven to 350°F (175°C). This ensures the oven is at the correct temperature for even baking.
  2. In a medium-sized mixing bowl, thoroughly whisk together the eggs, milk, salt, and pepper until well combined. Set this mixture aside for now.
  3. Place a medium-sized frying pan over medium-high heat. Add half of the avocado oil and allow it to heat for 30-60 seconds, or until it shimmers gently. Add the minced garlic, diced red onion, and diced mushrooms to the hot pan along with a pinch of salt and pepper. Then, carefully pour the whisked egg mixture over the vegetables, filling each cup about three-quarters full. Finally, sprinkle the grated cheddar cheese evenly on top of each frittata. Place the muffin tin into the preheated oven.
