Fiery Tomato Poached Eggs

Effortless Holiday Brunch: Savoring Shakshuka (Eggs in Purgatory) for a Joyful Morning

The festive season is truly upon us, and the heartwarming countdown has officially begun! Whether your days are already filled with cozy moments in pajamas, curled up by a crackling fire, or if you’re meticulously wrapping up your final tasks before the holidays truly kick off, this time of year holds a special magic. For me, it always signifies precious moments spent with loved ones – particularly extended quality time with my sister Kristi, her wonderful husband Sean, and my endlessly fun and utterly adorable niece, Mila. Traditionally, they’d make the journey to Canada for a classic white Christmas. However, this year marks a delightful change: our entire family is embarking on an adventure to visit them, ready to help them celebrate their very first Christmas in their charming new home!

Among my cherished holiday traditions, lazy Christmas mornings always stand out. While I can’t claim every year was perfectly serene – I distinctly recall early childhood years spent practically vibrating with excitement, counting down every second until we could pounce on Mom and Dad and confirm Santa had indeed enjoyed his cookies and milk! This year, with a vivacious two-and-a-half-year-old dynamo in the house, I anticipate a return to those wonderfully energetic mornings. And that’s precisely why this Shakshuka recipe is an absolute game-changer for Christmas morning brunch. It promises a delicious, satisfying, and memorable meal without requiring you to spend the entire morning tethered to the kitchen, allowing you to fully immerse yourself in the holiday cheer and family moments.

The Irresistible Allure of Shakshuka: A Deliciously Simple Brunch Solution

Often perceived as a gourmet, decadent dish, Shakshuka (also affectionately known as Eggs in Purgatory) is, in reality, incredibly straightforward to prepare. Once your vegetables are prepped – a task you can easily tick off the night before – it’s mostly a matter of combining ingredients in a single pan. Then, you simply allow the rich, aromatic flavors to meld and simmer gently while you soak in the joy of Christmas morning with your family. Whether your ideal morning involves leisurely sips of coffee (perhaps with a splash of Baileys!), listening to timeless Christmas carols in your coziest PJs, or delighting in the unbridled excitement of little ones as they marvel at the magic of Old Saint Nick, having delicious food doesn’t have to mean sacrificing precious holiday time to kitchen slavery.

This vibrant, flavorful dish is the perfect festive breakfast or brunch. It offers a celebratory feel without the heavy indulgence that might weigh you down before the grand turkey dinner later in the day. Shakshuka is light yet satisfying, ensuring you’re energized and ready to enjoy every moment, poised and eager when that magnificent bird finally emerges from the oven. It’s truly a versatile dish that transitions beautifully from a relaxed morning meal to a hearty lunch or even a light dinner, making it a fantastic addition to your culinary repertoire throughout the holiday season and beyond.

One of my absolute favorite ways to enjoy this incredible dish is alongside a warm, generously toasted slice of artisanal sourdough bread. The crusty texture and slightly tangy flavor of the sourdough provide the perfect counterpoint to the rich, savory tomato sauce, making it ideal for soaking up every last bit of that exquisite flavor. It’s a simple pleasure that elevates the entire meal experience.

As you navigate the delightful whirlwind of holiday preparations and celebrations, I’m sending an abundance of love to you and your dear ones. And amidst all the beautiful craziness, please remember to carve out some quiet moments for yourself. Take a deep breath, relax, and truly take in the unique magic of this special time of year. Cherish the small moments, the laughter, the warmth, and the delicious food that brings us all together.

Description

Discover the joy of perfectly runny eggs nestled within a rich, perfectly dippable tomato sauce. This Shakshuka recipe is a true crowd-pleaser that you’ll want to serve with robust, crusty sourdough bread. Enjoy it anytime – for a hearty breakfast, a satisfying lunch, or a comforting dinner.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 23 cloves of garlic, minced
  • ½ tsp dried chilli flakes (adjust to your preferred spice level)
  • 1 large red bell pepper, finely diced
  • 1 x 796 ml can (approximately 28 oz) diced tomatoes, undrained
  • ½ cup high-quality tomato sauce
  • 4 large eggs (feel free to add more if you’re serving a larger group or prefer extra eggs)
  • Coarse sea salt and freshly-cracked black pepper, to taste
  • ¼ cup freshly grated Parmesan cheese
  • ½ cup fresh basil, thinly sliced or roughly chopped
  • 4 slices thick-cut multigrain sourdough bread, expertly toasted
  • **Optional Spices for Enhanced Flavor:** While this dish is beautifully simple and flavorful as is, a pinch of smoked paprika or a dash of cumin can add a delightful depth and warmth if you’re looking to elevate the spice profile even further!

Instructions

  1. Begin by heating the olive oil in a durable cast iron skillet or a large, heavy-bottomed frying pan over medium heat. Allow the oil to get hot for approximately 1 minute, ensuring it’s shimmering slightly. Add the minced garlic and dried chilli flakes, stirring continuously for 1-2 minutes until their aromatic fragrance fills your kitchen. Next, add the diced red pepper and sauté for an additional 2-3 minutes, allowing it to soften slightly.
  2. Pour in the canned diced tomatoes (with their juices) and the tomato sauce, stirring well to fully combine all the flavors. Bring the mixture to a gentle boil, then reduce the heat to a low simmer. Let it cook, uncovered, for about 10 minutes, or until most of the liquid has evaporated, and the sauce has thickened beautifully.
  3. Carefully create small indentations or “wells” in the simmering tomato sauce, evenly spaced for each egg. Gently crack an egg into each divot. Sprinkle a generous amount of Parmesan cheese over the eggs and partially cover the pan with a lid. This allows the eggs to steam and cook evenly. Cook for approximately 5 minutes for beautifully runny yolks, or continue cooking for a bit longer until your desired yolk consistency is achieved.
  4. Once the eggs are cooked to perfection, remove the skillet from the heat. Garnish generously with fresh basil, a final drizzle of high-quality olive oil, and if you desire, a sprinkle of extra Parmesan cheese, a pinch of salt, or a few more chili flakes for an added kick. Serve immediately with your golden, toasted sourdough bread. Get ready to dunk and enjoy this exquisite meal!

Tips for Elevating Your Shakshuka Experience

Making delicious Shakshuka is quite simple, but a few tips can ensure your dish is truly outstanding:

  • **Choose Quality Tomatoes:** Since tomatoes are the star of this dish, opt for high-quality canned diced tomatoes. San Marzano tomatoes, if available, can make a noticeable difference in flavor.
  • **Don’t Rush the Sauce:** Allow the tomato sauce to simmer long enough for the flavors to deepen and the liquid to reduce. This creates a richer, more concentrated base for your eggs.
  • **Perfect Eggs Every Time:** For runny yolks, watch the cooking time closely – usually around 5-7 minutes after cracking the eggs. If you prefer firmer yolks, simply cover the pan completely and cook for a minute or two longer.
  • **Customizable Spice:** The dried chilli flakes add a lovely warmth. Feel free to increase or decrease the amount based on your preference for heat. A touch of smoked paprika adds depth without much heat.
  • **Fresh Herbs are Key:** Don’t skimp on the fresh basil! It adds a burst of freshness that brightens the entire dish. Fresh parsley or cilantro can also be excellent additions.
  • **One-Pan Wonder:** This recipe is designed as a one-pan meal, making cleanup a breeze. A good cast iron skillet not only cooks evenly but also goes straight from stove to table for an impressive presentation.

Serving Suggestions & Beyond Breakfast

While Shakshuka is a phenomenal breakfast or brunch option, its versatility makes it perfect for any meal:

  • **With Crusty Bread:** As mentioned, toasted sourdough is ideal for mopping up that delicious sauce. Baguette, challah, or pita bread also work wonderfully.
  • **Add Greenery:** A simple side salad with a light vinaigrette can complement the richness of the Shakshuka beautifully, adding freshness and texture.
  • **Cheese Varieties:** Experiment with different cheeses! Feta cheese crumbled over the top after cooking adds a tangy, salty kick that pairs incredibly well with the tomato and eggs. Goat cheese or even a sprinkle of mozzarella can also be delicious.
  • **Protein Boost:** For an even heartier meal, consider adding cooked chickpeas to the sauce before cracking the eggs, or serve alongside grilled halloumi cheese.
  • **Lunch or Dinner:** Paired with a green salad, Shakshuka makes a light yet satisfying lunch. For dinner, serve it with some roasted vegetables or a simple grain like quinoa for a complete and wholesome meal.
