- 1 ½ cups Ricotta Cheese, whole milk preferred for creaminess
- ¾ + ⅓ cup Peas, frozen, thawed (divided)
- ⅓ cup fresh Mint leaves, packed
- 3 tbsp extra virgin olive oil
- 1 large clove garlic, minced or grated (or 2 small cloves)
- Coarse salt and freshly ground black pepper to taste

- Begin by cooking the Kaslo Sourdough pasta according to the package directions until al dente. Reserve about ½ cup of pasta water before draining.
- While the pasta is cooking, prepare your vibrant pesto. Add the 1 ½ cups of ricotta cheese, ¾ cup of the thawed peas, fresh mint leaves, 3 tablespoons of olive oil, and the minced garlic into a high-speed blender or food processor. Pulse and blend until all ingredients are well combined and form a smooth, creamy pesto. You may need to pause and scrape down the sides of the blender a few times to ensure everything is thoroughly incorporated. Season generously with coarse salt and freshly ground black pepper to taste.
- During the last 1-2 minutes of the pasta’s cooking time, add the remaining ⅓ cup of thawed peas directly to the boiling pasta water. This will lightly cook them and ensure they retain their bright green color and sweet flavor. Once the noodles are perfectly cooked, drain them well, along with the peas, and return both to your cooking pot. Add the freshly prepared ricotta, mint, and spring pea pesto to the hot pasta and peas. Toss thoroughly to combine, ensuring every noodle is coated in the creamy, flavorful sauce. If the sauce seems too thick, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency. Serve immediately and enjoy!
