This quick and easy kale and pomegranate salad is a Registered Dietitian’s favorite, perfect for busy schedules and meal prepping. It’s bursting with flavor, texture, and essential nutrients, making it an ideal choice for a healthy lunch or dinner side.


Ingredients

Salad:

  • 1 bunch dino kale (lacinato or Tuscan kale)
  • 1 tbsp extra virgin olive oil or juice of 1/2 lemon (for massaging kale)
  • 1/2 cup pomegranate arils (seeds)
  • 1/3 cup crumbled goat cheese
  • 1/4 cup toasted walnuts

Balsamic Dressing:

  • 2 tbsp extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 ½ tsp dijon mustard
  • 1 tsp sugar (optional, for a sweeter dressing)
  • Coarse salt and freshly-cracked pepper to taste

Instructions

  1. Prepare Kale: Wash the kale thoroughly and either spin it dry in a salad spinner or pat it dry with a clean kitchen towel. Remove the leaves from the tough stems and tear them into bite-sized pieces. Place the torn kale in a medium bowl.
  2. Massage Kale: Drizzle 1 tablespoon of olive oil or the juice of ½ a lemon over the kale. Using clean hands, massage the kale for 2-3 minutes until the leaves become tender and slightly softened. This enhances flavor and texture.
  3. Add Pomegranate: Evenly distribute the pomegranate arils (seeds) over the massaged kale. If using a whole pomegranate, gently roll it, score the skin, and open it over a bowl to release the seeds.
  4. Add Cheese and Nuts: Crumble the goat cheese over the salad ingredients, then sprinkle the toasted walnuts on top for added crunch and flavor.
  5. Prepare Dressing & Dress Salad: In a small bowl, whisk together 2 tablespoons extra virgin olive oil, 3 tablespoons balsamic vinegar, 1 ½ teaspoons dijon mustard, and 1 teaspoon sugar (if using).
