“You’d most likely find me indulging at one of Toronto’s premier restaurants. As a dedicated foodie, I absolutely adore dining out, especially after a demanding week filled with crafting meals for my husband and me, alongside the extensive recipe testing I do all day for my work. It’s my perfect way to unwind and draw new inspiration.”
What was the pivotal moment that inspired you to embark on your entrepreneurial journey and establish your business?
“When I completed my Registered Dietitian (RD) qualifications, I had a very clear vision: I wanted to immerse myself in media. My background in theatre and acting was a significant part of who I was, and I wasn’t prepared to abandon that creative outlet entirely. Simultaneously, my deep-seated love for food and the extensive knowledge I had cultivated (which was, after all, my initial reason for pursuing dietetics) naturally pointed me in that direction. A few encouraging friends suggested I start a blog, and what began as a passion project very quickly blossomed into my full-time career. It was the perfect fusion of my varied interests and expertise.”
What stands out as the most valuable piece of advice you have ever received, and how has it influenced your life or career?
“I openly admit I’m a perfectionist, a textbook Type A personality. During my academic years, I often found myself overwhelmed by the immense pressure I placed on myself. It was my father who once shared a piece of wisdom that truly resonated and stayed with me: ‘If you always expect yourself to be on that pedestal, you will have nowhere left to grow.’ This advice was incredibly liberating, teaching me the importance of embracing imperfection, allowing room for mistakes, and understanding that true growth often comes from stepping down, learning, and rebuilding. It reminded me that constant striving for an unattainable ideal can stifle progress and creativity, and that humility and self-compassion are essential for sustained development.”
If you had to pick just one food item you could happily consume all day, every single day, what would it be and why?
“Oh, that is genuinely a tough question! There are so many foods I adore. But if I absolutely had to choose, it would probably be figs, especially when they are perfectly ripe and bursting with natural sweetness. I honestly don’t think I would ever tire of fresh fruit; its versatility and refreshing qualities are unmatched. And then there’s cereal – I have a profound love for carbohydrates in all their forms. The crunch, the milk, the endless flavor combinations… it’s a comfort food I could definitely live on!”
Where do you primarily seek inspiration for your culinary creations and nutritional insights, and which blogs do you find particularly compelling to follow?
“My culinary inspiration predominantly springs from dining experiences I gather from around the globe. I’m incredibly fortunate to have explored some truly phenomenal restaurants worldwide, many of which hold prestigious Michelin stars. Often, when I return home from my travels, my mind is brimming with a multitude of recipe ideas. These are typically creative adaptations or ‘riffs’ on the extraordinary dishes I’ve savored in those restaurants. It’s a fantastic way to bring global flavors and innovative techniques back to my own kitchen. In terms of blogs, I have a few favorites that consistently deliver quality content, like my wonderful friend Davida over at The Healthy Maven. Her approach to healthy living is always refreshing and genuine.”
Could you describe the most memorable or best meal you’ve ever had, detailing what made it so extraordinary?
“I’ve been incredibly privileged to experience countless astounding meals at numerous Michelin-starred establishments across the globe, making it genuinely challenging to single out just one. However, the meal that consistently comes to mind as the most memorable was at The Fat Duck in Bray, UK. This restaurant is a true culinary theater, an utterly whimsical, ‘Alice in Wonderland’-like experience filled with surprises at every turn that one could never anticipate. Each dish presented had its own unique narrative, often subtly tied to themes of nostalgia and childhood wonder. Being an ardent ‘Alice in Wonderland’ fan (and yes, I’m quite obsessed!), my absolute favorite was a dish inspired by the Mad Hatter’s Tea Party. It was delivered with a delicate glass teapot, containing what I believe was a perfectly poached quail egg and a few other mysterious, delightful components. Alongside this, they presented a ticking box filled with miniature golden pocket watches. One of these pocket watches (coated in edible gold) was then gently dropped into our teapot, and boiling water was poured over it. Miraculously, the pocket watch melted, dissolving into shimmering flecks of gold and bullion that infused the tea. On the side, there was a charmingly wonky, topsy-turvy hat adorned with exquisitely crafted tea sandwiches. I was utterly immersed in ‘Alice’ heaven, an experience that transcended mere dining to become a truly enchanting journey.”

“That is truly such an incredibly difficult question, given how many recipes I pour my heart into! They are, quite simply, divine! The combination of flavors and textures is pure bliss, and they embody my philosophy of making healthy treats taste indulgent. For the Filling:
- 1 ripe banana, preferably organic, diced for easier processing. A ripe banana ensures maximum natural sweetness and a creamy texture for your filling.
- ½ cup natural peanut butter. Opt for a smooth, unsweetened variety with minimal ingredients (just peanuts and salt) for the purest flavor and best texture.
- 2 tsp. coconut oil, melted. This helps to bind the ingredients and provides a subtle tropical note.
- ¼ tsp. vanilla extract. A touch of pure vanilla enhances all the other flavors beautifully.
- 200 g Green & Blacks Organic Burnt Toffee Dark Chocolate, finely chopped. This specific chocolate offers a luxurious depth of flavor with hints of toffee, complementing the peanut butter and banana exquisitely. Finely chopping ensures even melting.
- 2 tbsp coconut oil, melted. Essential for achieving a smooth, pourable chocolate consistency that sets nicely.
- Fleur de sel, for garnish. A sprinkle of flaky sea salt elevates the flavors, providing a delightful contrast to the sweetness of the chocolate and the richness of the peanut butter.
Instructions
- Prepare the Filling: In a small, efficient food processor, combine the diced ripe banana, natural peanut butter, 2 teaspoons of melted coconut oil, and the vanilla extract. Process these ingredients until the mixture becomes perfectly smooth and wonderfully creamy. Scrape down the sides as needed to ensure everything is thoroughly incorporated. Once achieved, set this delectable filling aside.
- Melt the Chocolate Coating: Take your finely chopped Green & Blacks Organic Burnt Toffee Dark Chocolate and the 2 tablespoons of melted coconut oil. Place these into a medium-sized heat-proof glass bowl. Set this bowl over a small saucepan filled with about 1 inch of water, creating a double boiler. Bring the water in the saucepan to a gentle simmer (do not let it boil vigorously). As the water heats, slowly and patiently stir the chocolate mixture until it completely melts and achieves a silky, smooth consistency, free of any lumps. Once fully melted, carefully remove the bowl from the heat.
- Create the Chocolate Base: Using a small spoon, carefully ladle a thin, even layer of the melted dark chocolate onto the bottoms of your chosen molds. You can use 8 regular-sized silicone muffin containers for larger cups or approximately 50 very mini-sized silicone molds for bite-sized treats. The silicone molds make for easy release. Arrange these molds onto a baking sheet, which will provide stability. Transfer the baking sheet with the molds to the freezer to allow the chocolate base to harden for at least 5 minutes. This step is crucial for a firm foundation.
- Add the Banana-Peanut Butter Filling: Once the chocolate base is set and firm, take your prepared banana-peanut butter filling. Gently roll or shape a portion of the filling into a ball or disc. The goal is for this ball to be no wider than the diameter of your muffin or candy mold. Carefully press this filling on top of the hardened chocolate base, being mindful not to let the filling touch the sides of the mold. Try to create as flat a surface as possible for the next layer of chocolate. For regular-sized molds, we recommend using a generous heaping tablespoon of filling. If you are using the mini candy molds, a smaller amount, perhaps ½ teaspoon, will be sufficient.
- Enrobe with More Chocolate: With a small spoon, very gingerly pour the remaining melted chocolate down the sides of each mold, allowing it to fully envelop the peanut butter filling. Then, ensure the top of the filling is completely covered with a smooth layer of chocolate. Work quickly but carefully. Once all the cups are coated, transfer the baking sheet back to the freezer. Allow them to set completely for at least 20 minutes, or until firm to the touch.
- Serve and Enjoy: Just before you are ready to serve these delightful treats, carefully remove them from their silicone molds. Sprinkle each cup with a delicate pinch of fleur de sel. The flaky sea salt provides a wonderful contrast to the sweetness and richness, enhancing the overall flavor profile. These homemade peanut butter cups can be prepared well in advance and stored in the freezer, making them a convenient dessert or snack. However, for the absolute best taste and texture, they are most enjoyable within about 15 minutes of being removed from the freezer, allowing them to soften just slightly to a perfect eating temperature.
